Thursday, November 5, 2020 - I put this wine in the cellar for a few years just as an experiment.

Interesting results. The wine has definitely evolved. Rich golden color. Very tropical - toned fruit like lychee, pineapple, grilled pineapple, and maybe even a little banana.

The one little part of it that makes me feel like it didn't really need to age (and probably shouldn't) is that it has this kind of roasted nut finish that is incongruent with the tropical fruit component.

Nevertheless, it went down just fine and paired well with some butternut squash ravioli in truffled butter sauce.

Any other flimsy Pinot Gris probably would be gravy sauce by now so the fact that this is still drinkable and enjoyable is a testament to it. Still, I'll probably just drink any other bottles of this that I get while young.
