On the nose: clove, soft cinnamon, pomegranate, brambles, soft blackberry..so compelling. On the palate: density has definitely picked up.from what I remember; some grapeseed, dark blackberry, bitter wood, and transitioning seamlessly to a slightly tannic finish. I'm still not entirely happy with the showing on the mid-palate, but the aromatics are compelling enough to make me almost not care. Paired with cauliflower steaks with nutritional yeasts and liquid aminos (yes, very vegan), and an assortment of other roast vegetables, prepared in different ways. An excellent pairing (ironically, bc of the bitterness on the palate with which I was less than enamored).
