Saturday, October 1, 2016 - A fine balance between approachability and structure, this is ready now, but I'd recommend opening well in advance as additional (mostly subtle) nuances just seemed to keep coming and coming. Not too lean, with a brisk coolness that keeps the savory aspect fresh and juicy. Good/moderate length and a little more flavor development than I was expecting. Better with food than on its own, I thought. Drink thru 2020.
