Thursday, May 10, 2012 - Chenins, Chambolles and Moreys at Ibiza (New Haven, CT): A thrilling wine to sit down with and follow over some time; it's not very expressive aromatically at first but aromas quietly build into a lovely perfume of exotic spicy, floral and savoury gamey and earthy elements. The palate presence is remarkable, conveying waves of red fruited, spicy and mature savoury/sous bois elements with intensity and remarkable persistence but at the same time an ethereal sense of lightness. This is drinking superbly right now with tannins fully resolved and an incredibly silken, finessed texture.
