Saturday, November 23, 2013 - Outstanding. Fresh and extremely young. Beautiful apples, ginger, and some nut tones. Very bright, fresh, and minerally. Superfine mousse. Had this with a matsutake tasting menu at Altura and it was amazingly versatile with the various dishes, including the white truffle course. Fabulous!
