Sunday, February 4, 2024 - Follow up From a coravin bottle- wine is still all about structure than the full potential- muting the middle against walls those walls of structure. Dark fruits- check. Dark earth and minerals- check. Loads of structure - high acid with the substantial tannins just beginning to soften and round but only just the beginning. Hold for a min of 5-7 years before opening the next one. Good potential down the road. Nap time for now.

    2/4/2024 6:40:00 PM - Haven’t bought any Macquin but seems to be riding the Pavie coattails. For higher end StE Clos Fourtet & Canon la Gaffeliere are my go to. More history of good wines with them. I think a 15 StE shouldn’t be completely closed at this point. IMO

    2/4/2024 7:03:00 PM - Hey Wine Guy Del Mar- nice to hear from you. The chateau, although not related to Pavie, does have the darker profile but doesn’t have the goods to be misconstrued for a sibling.

    In St Emilion I tend to prefer at the most reasonable price point Tour St Christophe & Laroque (as of the recent vintages ), Canon, Belair Monange, Valandraud and L’If at the mid price point with Figeac, Angelus and Cheval Blanc on the higher end. I like to buy a bunch of 375s and check in on others from time to time which can always be fun…. But like you, I would have thought this being a right bank in ‘15 would have been more open but the added structure is presenting challenges. Cheers and happy drinking!

    2/5/2024 9:19:00 AM - Liteitonfire Lots of great StE juice. It is by far my favorite wine to drink.I think I have 22 or 23 different producers in my cellar. You can take a look. So many good ones I don’t have a favorite. I have them from $23 (18 Mangot) all the way up. I usually don’t chase the higher priced ones but sure they are excellent. I had full cases of Angelus, Figeac & Pavie most vintages from 85-90. Cheers!!
