Friday, December 1, 2006 - This has filled out somewhat since the last few bottles I had about five months ago. Expressive nose of asian pear, quince, a faint floral note, and a very light honey element. On the palate, gorgeous texture - soft but not blowsy. Layers of pear and faintly tripical elements, along with a touch of honey. Delicious. This is a very well-made white Chateauneuf, IMO. Tonight I thought it paired perfectly with crispy skin striped bass, white asparagus steamed and then braised in olive oil, and sauce gribiche (Alice Waters' recipe from The Chez Panisse Menu Cookbook).
