At this point, almost Grand Cru weight and harmonious feel with the barest puff of ripe citrus, but mostly the primordial mix of saline and stone that is Chablis. As I reach the end of my supply of this wine, this was probably the best bottle yet, and it provided a poignant reminder about not writing Dauvissat off as too rich or fat prematurely. It often takes these wines 10 years or more to get their bearings and reveal their underlying structure.
