Saturday, December 16, 2023 - 2/11. Decanted clear with ~1 oz. remaining of mixed density. NOSE: it's all that I could hope for in delicate, alluring sensations reminiscent of violets, graphite, rinsed stone, berry, spice, cacao, and maduro cigar wrappers. MOUTH: bright, active, tumbled bodies of inky berry fruit, utterly transparent in dryness. Fine, cool stone-textured, and determined tannins rest intermittently on savory black salts and iodine evergreen. It's a pleasure to drink immediately, and it's clear that some aeration will help it along. I wouldn't hesitate to forget about the remaining bottles, even for a few years.

SUMMARY: it was an amazing pork steak from McElroy Farms, and though I'm not a fan of pairing pork with claret, it worked well, on account, I suppose, of the strength of each component. The last few drinks from the bottle, three hours later, are the best of them. The mineral profile firmed up and gained transparency. This had the effect of drawing in loose threads of rare, scented botanicals. The saps are more attenuated, The iodine and balsam are laced tight. It represents a logical extreme of three maximums: seriousness, drinkability, and lunchpail universalism.
