Monday, February 14, 2022 - Wait ten years. Decanted 4.5 hours before pouring. Extremely tannic, good acid, very little discernible fruit. This worked (mostly) as a counterweight to very rich A5 Wagyu, but way too young to drink by itself. Unclear to me how good this might end up, but it won’t be for a long time, if at all. (I knew this would be the case, so it’s on me for opening.)
