Friday, December 6, 2013 - Way tighter than the last bottle. 3-4 hours in, barely a dent in the tight cloak this wine has drawn around its core of fruit and complexity. All it shows is tart cherry, acid, tannin, and some earthiness typical to Italy. The last bottle of this we opened had been subject to much more temperature variation, had been moved twice, stored at higher temp, and came across beautifully. Apparently, the precise storage of this bottle has truly delayed its drinking window. Interesting experiment, we'll be drinking all of the other bottles before getting back into this batch.
