Wednesday, June 21, 2023 - This is dazzling. Has the vervey acidity of Chablis and beautiful Sicilian minerality. Nose features stone, honeyed lemon, apricot, peach, bay leaf, and dried white flower. Medium bodied with lively acidity and a slightly texturally girtty mouthfeel. The flavor profile is slightly salty and honeyed, featuring apricot, bitter melon, lemon zest, mandarin, and white pepper. Seems to be at its pinnacle, I can see this developing some bitterness soon.
