Monday, November 12, 2018 - I have a thing for finding champagne's with all seven allowed grape varieties, fun to try to see the influence of each grape in the blend. This one is 17% Pinot Noir, 15% Meunier, 18% Chardonnay, 11% Petit Meslier, 12% Arbanne, 13%Fromenteau, and 14% Pinot Blanc. Caveau says 100% from 2013 harvest, with a small dosage of 2.5 grams/liter (which I will say is super surprising because it simply tastes sweeter than that. It spent 3 years on the lees, disgorged March 2017. Only 100 cases produced. Anyway, very refreshing, and yet quite complex, especially as it warms up. I do get a lot of citrus (lemon/lime) and even some peach. Some herby elements, perhaps some floral. I really enjoyed it, just felt it would be better to be a bit more round. None the less, well worth seeking out.
