Saturday, December 25, 2021 - 2nd (and last bottle). Wild, gamy aromas, with notes of red fruit, cherry, a hint of volatile acidity (not a bad thing) and something reminiscent of old flowers (also in a good way). Tannins are quite a bit more restrained and less aggressively grainy. Tastes almost salty and meaty. It's weirdly pretty and elegant despite how feral the aromas and flavors are. Cool to see this a few years later.
