Saturday, September 3, 2005 - Popped the cork and allowed to sit 2+ hrs open but not decanted. Initial sample was great grape juice in a B&H type fashion. After the 2 hr. sit time, fruits had softened but were still quite strong; berries, eucalyptus, and tobacco with a nice tannic baseline. This was at it best in the 2-3.5hr window, and had softened considerably after 5+ hrs. Still quite enjoyable at this point, but the forwardness I tend to enjoy in the few solid cab francs we've found (this among them) had dissipated too much at this point. Thanks Mbansek for a great cellar-warming gift! 3-5 years at least remain in the drinking window.
