Thursday, July 28, 2022 - Like the name says, pretty classic Clare Valley character here, but looking noticeably more matured than I would have expected for only 5yrs under screwcap.

I expected zingy lime juice with granny smith apple notes but it's evolving into Bickfords lime cordial with ripe red apple. Seemed slightly syrupy, maybe just a little residual sugar too?

Quiet lovely but a richer version of the style so don't pair with fresh seafood as I'd normally be inclined to, should be great with pork. Maybe a vintage to drink younger than usual too as it seems fast maturing
