Friday, October 1, 2021 - This is elegant and sophisticated cabernet. The aroma profile includes violets, cedar, cigar, and plum. The wine is juicy and flowing on the palate until the rather serious tannins kick in. For folks (like me) accustomed to drinking Bordeaux and Napa, this wine’s moderate weight and high acidity may not be immediately suggestive of a great cabernet sauvignon. I think it more closely resembles a good Loire cabernet franc. I think this wine will improve with age as the tannins soften and the aromas evolve.
