Monday, November 29, 2021 - The cork was about 1 cm into the neck but it came out easily with a Durand. The bottle was opened 5 hours before dinner.

Sensual exotic perfume coming out of the bottle upon opening. We could smell it even in the room! Brick color on the rim, but still quite opaque and dark.

On the nose, still fruity (dark berries) and relatively fresh (it could pass for a quite younger wine). A lot of warm spices, old leather, pencil shavings and some damp earth too. Surprisingly, we smelled a hint of green pepper in there!

You could taste the warmth of the alcohol during the first glass, but that blew off quickly; I found it funny though because it's only a 11.5% degree wine!

Dusty in the first sips, but everything cleared up with a couple swirls in the Zalto Bordeaux glass. The taste was betraying the age of the wine more than the nose, but it was still quite good, something in the realms of a heavy raspberry/blackberry jam. Medium to long finish; all tannins resolved.

Very good giving the age, and a perfect match to our roasted apple-lacquered quail.
