Monday, January 21, 2008 - This wine has surprisingly changed itself for the better after being opened for 24 hours. I was going to fairly quick to write it off yesterday evening as short and uninteresting. Concluding, prematurely I might add, that the wine had drifted past it's prime. Tonight, it has blossomed both in fragrance and flavour, with a lovely blend of mocha and light spice and subtle but delicious flavours of bright cherries and reserved tannins. This is the kind of surprise I love in a wine.
