Friday, November 11, 2011 - Disgorged October 4, 2007. Initially strong mousse. Complex nose with apples, oranges, golden lemons, nuts, sesame seeds, light toast and a sherry-like cask oxydation, No hyacinth notes anymore. Rich, smooth taste with citrus acidity. Slighty grapefruit/oak-bitter finish. Very chalky mineral aftertaste with obvious fino notes. The bubbles fade quite quickly in the glass, then it drinks like a good maturing white burgundy. Lovely, but it seems to be time to drink up now.
