Thursday, September 10, 2015 - A wonderful complement to caviar and yet a not ready to drink on its own wine. Very fine mousse with a nose of dry ginger, yeasty notes, asian pear, apple cider, freshly grated nutmeg and background cardamom. A fully engaging front palate but with a quite firm backpalate acidity that makes for a pleasing but austere finish. This wine has a lot of life yet to live and should only get better for the next 5-10 years. May 2013 disgorgement. 92+

    9/13/2015 6:46:00 PM - With some disgorgement date variation, I find them to be quite different wines. The Substance can be initially more approachable with more oxidative and yeasty notes. But both are great wines!
