Saturday, September 10, 2016 - Sushi Night (Omakase, San Francisco): Disgorged August, 2013. Deep yellow, transient mousse. More caramel than usual. Also fuller than I expected with red apple and definite oxidative notes. This bottle was not as bright as Initial usually is, although maybe we didn't spend enough time with it as it was a pre-dinner aperitif on the way out. Toward the very end of the bottle, more citrus came forth, and it seemed less heavy. Still, overall, a disappointment.
And, in fact, the next morning the dregs seemed fresher still, creamy and now with a note of ginger. Ah, these Selosse wines are living, breathing things. I should know better than to write them off too soon.
