Tuesday, May 30, 2017 - Celebration dinner (Heirloom cafe): Light golden with excellent bubbles; highly aromatic with plenty of bruised apple, slight yeast, brioche, slight oxidation that I love; palate has excellent apple and citrus fruit, nice density; finish is long. Wonderful champagne. 95+
Day 2: Still good, but a significant drop since it was first opened yesterday. I didn't expect it to improve, but still good to note that this champagne should be opened and finished on the same day.
