Friday, October 13, 2017 - Disgorged December, 2013. Full yellow, subdued mousse. This starts with a fair amount of caramel but freshens to reveal bruised apple and a citric twist. Full bodied and creamy, but enlivened by excellent acidity. Very alive, constantly changing in the glass. Again, for me, this proved to be just about the optimal time to open after disgorgement. I know that others prefer it with more age and an even stronger oxidative component.
