Thursday, December 28, 2017 - Pale gold in color. Tiny bubbles as expected. Nose is of peeled apples, a bit of caramel, not much yeast. One of a kind. On the palate it is round. Not as acidic as most Champagnes I've tried. The texture reminds me more of DP than Krug. Good weight but with just enough acid to remain elegant. Like drinking a Meursault with bubbles with the oxidative nose of aged Jura's Savagnin. The finish is at least 50 seconds long. This is definitely unique. Excellent Champagne.
