Sunday, March 11, 2012 - Rated our favorite as the food sparkler of choice for a rehearsal dinner for 60+ people. Good complexity and acidity. Stood up to a spicy pork dish and a spicier shrimp dish. Wasn't overly tart like many of the sparklers we sampled, nor did it have any annoying aftertastes like many of them had or developed over the course of several hours of sampling. It was good upon opening, again not a trait shared by many of the sparklers in our sample, and didn't need any airing. It had a very pleasant nose with a hint of yeast and red fruit. It opened up nicely over the course of several hours and as it warmed towards room temperature...interesting and tasty the entire time. It was decent two days later when we finished off part of the bottle, though it was slim on the effervescence scale. Great bang for the buck and you will stump people on the country of origin...forget them guessing the state it's from!
