Saturday, January 13, 2024 - I paired this with prime sirloin cap cut. It took at least 6 hours to fully show its depth. This was just enough jam for me without being over the top. The nose was pleasant and lingering and initial mouth feel was smooth leathery but fade to jam. Not a perfect steak pairing however I thoroughly enjoyed finishing the bottle with some dark chocolate the rest of the night.
Needs a few years and this will be even better.
