Monday, December 13, 2021 - Elegant and layered bouquet of ripe blueberries, black plums with fresh sage, star anise and hint of savoury grilled meat over the hot stones on the nose. Rich and plush palate of plummy and savoury notes on entry. Some freshness, spiciness and tannins in the medium-bodied structure to balance the potentially flabby elements, which could lead to the texture being too dense and uninteresting. Finish is clean but chalky for now. A few more years of aging would turn this into a graceful swan. It should be drinking well between 5-10 years.

Re-tasted in Dec 2023. Continued to evolve. This is more approachable and elegant now. Still need some
decanting to bring out its finer aromatics. Tannins are less aggressive. Letting this develop for next 3-5 years would be even better. To increase score by 1 pt to 91.
