Thursday, August 27, 2009 - Initally after opening, aromas of lime and slate. On the palate, very acidic and very dry, with a pleasantly long finish. An hour in, strong impressions of cut grass, honey, quince and lime. Refrigerated the bottle and consumed over the next few days--it kept getting better and better, with some softening of the acidity and more complex aromatics. I would really love to try this again a decade or two from now.
