2000 Laurent Tribut Chablis

Tuesday, June 2, 2015 - Finally an aged, early noughties Chablis which is not oxidised!!
Appearance: Lovely, straw colour.
Nose: Initially dominated by a wonderful, semillon like waxiness with notes of honey, followed by oysters and sea water.
Taste & palate: Mature, again wax, medium to rich body (for a Chablis), medium oiliness. Not exactly fruit forward but still a combination of fruit with freshness/acidity which is quite appetising. This wine had great acidity when young and that still shows. Very dry but rich and slightly oily at the same time.
Not terribly complex but a very, very good, aged Chablis Village and a very pleasant surprise! I would not advice to cellar this much longer (although it might just handle a few more years) but rather enjoy it now at full maturity.
