Thursday, December 22, 2022 - Opened at Caprice in Hong Kong. Decanted but enjoyed immediately.

This was a very pleasant surprise - a beautiful Chassagne and drinking wonderfully despite the young age. Just give it some air, and it will blossom. Buttery, nutty and floral Chardonnay notes, balanced by good acidity and structure on the palate.

PYCM is the real deal. I think there is some upside here, and would revisit in 3+ years.
