Saturday, December 4, 2021 - Magnum. Opened evening of 12/3 with anticipation of drinking over next couple days. Did slow ox overnight and then small decant the following day hour before dinner. No cork issue which I often have with Ridge corks, used ah so. First “trial” tastes were delicious. Fresh, low acid, nose carried some tart cherry which followed on the palate. Red fruits, red licorice. Sleek and light. I thought this was lovely. Only bad news if you can call it that is that it really didn’t develop much over following 2 days( I recorked after second night). Stayed consistent which I guess is good.
