Friday, January 15, 2021 - Pale yellow. Right after opened chalk and chalk powder. After that, notes of chamomile and white musk. Some flowers like lily in the background. After some further oxygenation just a dash of burnt sugar. Steely acidity, very mineral, the chalk becomes iron or steel in the mouth. Persistent and elegant citrus bitterness. The extra brut is so evident with nearly zero concession to sugar. This is a very austere but subtle champaigne, not a pleaser. The balance between bitterness acidity and minerality is remarkable given the total lack of sweetness.

This wine needs more time in the bottle to fully express itself. I would hold on this bottle for another 3 years at least.
