Saturday, March 2, 2024 - Decanted a portion with stir and it opened within 30 min. Vacuvin’d the rest and similar results on day 2 and 3. Deep ruby and purple color. Light rose, leather, and a hint of black cherry on the nose. Dusty cherry, leather, earth on the palate with 30-35 sec finish. Strong mouth puckering acidity and moderate amount of sediment. Pairs decently with tomato-based pasta sauce, pizza, etc.. My first dolcetto.
