Saturday, January 23, 2016 - I opened it intending to let it breath in the bottle for an hour and a half. Luckily I tasted it in 15 minutes and realized it should not breath a second more. I stoppered it back up and waited for the meal to be ready (aged prime rib steak and asparagus with bernaise). Fantastic bottle with notes of wild PEI strawberries. It is very ready now and if I had another bottle I would NOT risk letting it sit any longer.
