Saturday, May 22, 2021 - Nose: Honeysuckle, pineapple, apricot, mint, jasmine tea, nuts and marmalade. Palate: Racy acidity delivers a moderately viscous wine across the palate with detail. Lots of candied orchard fruit, floral notes, mint, orange zest and nuts. Finish: Long and precise with more of the honey and vanilla crem brulee elements showing.

This is a low botrytis Sauternes in 2006, so the freshness and purity are excellent. Paired with oysters and caviar with Sabayon. Amazing.
