Thursday, July 7, 2022 - Served too cold initially, and still delicious.

Once it warmed to about 50 degrees (10 C), it paired exceptionally well with Roquefort. Tremendous range of flavors, excellent concentration, positively ripping acids. Improvement, over the next several years, seems possible. 92-93.
