Friday, December 29, 2023 - Aearted and decanted 1.5 hours. Surprisingly assessable at that point. Cassis and floral notes. Green forest floor. A touch resinous. Deep. 68% Cabernet Sauvignon, 19% Cabernet franc, 10% merlot, 3% petit Verdot. This is good, good stuff. Every vintage of Les Pavots is wonderful—a go-to wine for me.
