Saturday, March 24, 2012 - This wine, taken from my cellar, was purchased upon release and cellared in pristine fashion. It was double-decanted, allowing approximately two hours in decanter prior to funneling back into the cleaned bottle. The wine was then taken to a restaurant, where it was consumed with Wagyu beef and mushroom pasta. The robe is deep garnet and the rim is brick. The nose shows moderately intense aromas of pipe tobacco, potpourri, plum and earth. Full-bodied on the palate, with medium acidity, soft residual tannins, well-integrated alcohol and flavors mirroring the nose. The middle palate is solid and the smooth finish is medium-to-long. This wine is a bit of an enigma at this point. When double-decanting, a tasting portion was retained in a Riedel Bordeaux glass and allowed to aerate 4-5 hours. It showed a more complex and fruit-filled bouquet in this glass than did the wine poured at the restaurant, making me suspect that I did not give the wine enough air prior to funneling back into the bottle.
