Thursday, March 3, 2022 - Fresh lemon, classic Chablis minerality, and some cheese rind.

High acid! Long finish that echos the nose.

If someone is curious what classic, high quality Chablis should taste like, hand them a glass of this. Do not let the appellation deter you from spending ~$60 on this bottle. It’s better than most producers' grand cru offerings.
