Thursday, January 18, 2024 - Day one this was more tightly wound, with more minerality and acid, less fruit forward, after a few days of being open it's settled much more into ripe orchard fruit, crisp apple, with the minerality and acid taking more of a role on the finish. This is great, really impressed with it through all stages of its evolution.
