Friday, June 9, 2023 - Slow ox for 2.5 hours at cellar temp and paired with a sous vide ribeye. Nose of iron/blood and blackberries. Flavors were not as fruit-forward as most Torrins, with beef blood mingling with layers of dark fruits. More earth than fruit, and no cherry from the Grenache. A bit of spice on the finish. Delicious, just a bit more restraint on the fruit than usual.
