Saturday, November 27, 2021 - Dry, minerals, vegetal. Good with a stanky cheese (Jasper Hill Farms Mini Harbison) and some quince jam before dinner, as well as the main salad with peppery arugula/charred scallion vinaigrette/roasted yellow beets/goat cheese/hazelnuts/pomegranate seeds.

Should have used this to deglaze the turkey pan on Thanksgiving instead of the somewhat sweeter white I had handy.

Colombard is new to me, and I like it. This is a tasty, very flexible wine that I need to track down more of!
