Thursday, February 5, 2009 - Completely transformed with a couple of hours of air. At first, very rustic - mostly earth and tobacco. Those flavors moved to the background as it mellowed out. Not much identifiable fruit, but the sweet vanilla and fudge tastes came out. I think I would have liked this better if there had been some sort of in between stage. Regardless, was pretty good and an adventure.
