Tuesday, July 5, 2022 - A cuvée of Grenache, Carignan and Cinsault with a yield of 25 hl/ha. Hand-picked, 100% destemmed, fermented for seven days and aged for around 18 months in concrete, enamel tank and large wood. Philippe Gimel gives the wine ten years to develop.

The aroma of the 2019 La Source reveals both warm and cool notes from the outset. The warm ones are likely to be contributed by the Grenache with its liquorice and sweet cherries. There is also some warm yeast cake and a few prunes. Cooler notes are sour cherries, sloes, garrigue, some ink, black olives and stone.

On the palate, the dark cuvée proves to be round and ripe with a wonderfully firm tannin lining the palate and fresh tart notes of cherries and red berries. Then it becomes darker and warmer again with ripe juicy fruit and some yeast. This is also accompanied on the palate by garrigue and stone. This wine should be given a fair amount of air in the decanter. Philippe Gimel's La Source is particularly enjoyable in large wine glasses with spicy Provence cuisine.
