6/27/2013 4:44:00 PM - I hope you don't mind a comment/suggestion. I have had many Diamond Creek Volcanic Hill's from the 80's and they have to breathe for hours and hours, at least 8 and often it is better after 24+. That acidity you mention and dry tannin turns into rich dark chocolate with enough time. Quirky perhaps but I have seen it rather consistently over the years.
