Friday, January 1, 2016 - New Year's Day Pork Shoulder and Grits Supper (San Francisco): Medium yellow. Lovely nose of flowers and orchard fruit. Medium weight, chalky base, fine rendering of Chablis saline quality, and excellent acidity for the year. The additional aging from 2012 through the present has really helped bring this wine into focus. When last tasted in 2014, I never thought it would lose its more tropical character and show as more classic Chablis. I was wrong. This was my last bottle, but I can see it hanging in there for at least another 2 to 3 years.
