Saturday, November 29, 2014 - 'Farewell Jason' Long Lunch (Hong Kong Wine Vaults, Aberdeen, Hong Kong): Faded but clean plum and damson colour. Nose is high piano note of phenolics..... just super complexity. Palate is thin and faded but still showing its former glory. Not much length or resonance but still a treat......thanks Steve!

    7/5/2015 5:28:00 AM - Hi Howard, 1973 was not a strong year so every bottle will be volatile and might be quite fleeting, so definitely don't decant.

    Also, don't set your expectations super-high because so much will depend on how the bottle has been stored during its long life. Treat it as an interesting experiment (and with a good predictable backup wine) then you may be pleasantly surprised on the upside.

    Regarding food, it is a delicate and feminine wine at this stage of its life so I would pair with very simple rare meat....... beef carpaccio, simple grilled steak, that sort of thing.
