Saturday, March 9, 2024 - Very interesting to see what's possible with melon de bourgogne. It needs time and air to open up started closed but after a few hours it began giving more. Very interesting and enticing nose of melon, honey, yeast and apple. The palate has great acidity, minerality, quite a bit of salinity, melon, yeast and some citrus. Long and pleasant finish. As said in the beginning it's quite shy so do give it enough time. Interested to see what some age would do to it.
