Wednesday, February 8, 2023 - Minerally, crisp and medium bodied. The wine was tight the first night so I put the cork in it to enjoy the night following. It really improved and confirmed my hunch that this is built for medium term cellaring for sure. Tonight it's still crisp and mineral, not too much oak, greener citrus like candied lime - and herbs - tarragon, chervil and a bit of anise. Nutty on the finish. Yum. Oh yeah and there's pear in there too, not too ripe though.
